A career spent where the numbers meet the loading dock

Hotel operations and corporate procurement, from the back of house to the bid table.

Art Cohen Consulting is built on an extended career across Hyatt Hotels, Starwood Hotels, Baha Mar Resort and Foodbuy Hospitality. The work has run along two lines that rarely sit together in one resume: running hotel operations where cost is spent daily, and running the purchasing programs and supplier agreements that decide what that cost is. That combination is the whole basis of the consulting practice — specifications written by someone who has managed the departments that live with them, and operating procedures written by someone who has seen the contract behind every line item.

A career entered line by line

Four postings across hotel operations and corporate procurement, each one adding to the same discipline: know the spend, hold the specification, keep the operation running.

Hyatt Hotels

Hotel operations

Day-to-day operational management inside a full-service hotel environment, where cost control is settled on the floor and at the receiving door rather than in a report.

Starwood Hotels

Purchasing

Purchasing responsibility across a branded hotel portfolio, working specifications, vendor terms and ordering routines into a repeatable buying process.

Baha Mar Resort

Procurement

Resort-scale procurement, where volume, storage and logistics decide whether a purchasing decision holds once the property is operating.

Foodbuy Hospitality

Corporate procurement

Group purchasing work on the supply side of hospitality, translating aggregated programs into terms an individual operation can actually use.

Hyatt Hotels

Operations management. Learned the property from the inside out, where labor, product and service standards meet at the same cost line.

Starwood Hotels

Purchasing. Built and held buying routines across branded properties, keeping specification and price under the same review.

Baha Mar Resort

Procurement. Sourcing and supply at resort scale, including the storage, receiving and distribution realities behind every order.

Foodbuy Hospitality

Corporate procurement. Worked the supplier and program side of hospitality purchasing, then carried that view back to the operator’s ledger.
